Cranberry Bourbon Relish
A tangy cranberry relish brightened with bourbon, shallot and orange zest.
Ingredients
- 1 cup bourbon
- 1/4 cup minced shallot
- Zest of 1 orange
- 12 oz package of fresh cranberries, picked over
- 1 cup sugar
- 1 tsp black pepper
Instructions
- Combine bourbon, shallots and orange zest in a small nonreactive saucepan.
- Bring to a boil over moderate heat, then simmer, stirring occasionally, until reduced to syrupy glaze (about 10 minutes).
- Add cranberries and sugar, stirring until sugar dissolves.
- Lower heat slightly and simmer uncovered until most cranberries burst (about 10 minutes).
- Remove from heat and stir in pepper. Transfer to bowl, cool to room temperature, cover and refrigerate.
Notes
This could make a cranberry lover out of anyone. This tangy cranberry relish makes a good accompaniment to any pate or cold or smoked meat.
