Cranberry Bourbon Relish

A tangy cranberry relish brightened with bourbon, shallot and orange zest.

Ingredients

  • 1 cup bourbon
  • 1/4 cup minced shallot
  • Zest of 1 orange
  • 12 oz package of fresh cranberries, picked over
  • 1 cup sugar
  • 1 tsp black pepper

Instructions

  1. Combine bourbon, shallots and orange zest in a small nonreactive saucepan.
  2. Bring to a boil over moderate heat, then simmer, stirring occasionally, until reduced to syrupy glaze (about 10 minutes).
  3. Add cranberries and sugar, stirring until sugar dissolves.
  4. Lower heat slightly and simmer uncovered until most cranberries burst (about 10 minutes).
  5. Remove from heat and stir in pepper. Transfer to bowl, cool to room temperature, cover and refrigerate.

Notes

This could make a cranberry lover out of anyone. This tangy cranberry relish makes a good accompaniment to any pate or cold or smoked meat.
